Phyllo Pizza with Feta, Basil & Tomatoes

My friends at Cooking Light did it again - they brought us multiple wonderful recipes last summer that quickly turned into family favorites.Last week I made the delicious PHYLLO PIZZA WITH FETA, BASIL & TOMATOES. Dustin usually prods me to make this frequently, although I only give in some of the time. This time though I was working in a hurry, so I can safely say that this recipe can be thrown together in less than 10 minutes and cooked in 20. Hurray for home cooked meals under 30 minutes!


Unfortunately, I wasn't quite keeping my eye on the oven, so the crust came out slightly more well done than usual, but still good! And it may not look as pretty as the magazine picture, nonetheless it was salty, savory and delicious. I wish I had a picture of the bottom, it was a beautiful golden brown crust without a hint of being burnt.



We just received a new DVD in the mail from Netflix, TrueBlood - Season 2, so we made it a TV dinner night.

Watchin' sexy vampires with my man while indulging in my fav homemade pizza??

It's official, I am a lucky girl.
